She made all of our bread

Prompt: What are some of the family recipes that you still remember?

So you know, Mom would just make all of our food from scratch.  She made all of our bread and delicious Cinnamon rolls. She made eight or nine loaves of bread at a time, so it was homemade bread. My mom’s recipe for Dressing (or Stuffing as some people call it): She would use the rubbed sage, just sage, and then, of course, the broth from the home raised chicken. Then you sauté onions;  And in later years, she would put celery in it too.

So I use sautéd onions and celery. And of course I use store boughten chicken now, and I just cook the chicken in the crock pot, and I use that broth to add to the stale broken up bread, this dressing is just so so moist. I go to a health food store in Chadron to buy the rubbed sage.

Years ago, we had Raleigh salesmen, the lady that would come to the country to everyone’s houses to sell their products, and some of their spices were just so good. At the health food store in Chadron the cost of spices is really nothing there. It’s just pennies for their spices and stuff. 

You just sauté the onions and celery, and then have your dried bread broken up, and two tablespoons of rubbed sage and the salt and pepper. I cook it in the roaster. I take the turkey out of the roaster and put in the dressing. I don’t put the dressing (stuffing) in the turkey. Mom used to stuff the turkey, but I just grease the roaster and put the dressing in it, and then put the turkey back on top of it, and then bake the last hour and a half together at 325 -350 degrees, so the turkey has the flavor of the dressing too. 

Oh, it has six eggs.  Yeah– So you beat six eggs, and that’s the first thing you pour over the broken up stale bread. If it’s a bigger batch, I use at least 24 ounces of bread. But yeah, six eggs.  So the eggs give it that thickening and adds to the flavor, just what is needed to hold it together.

So that’s how I remember my mom—— Every time I’m cooking, I am talking to my mom, because you know when you lose your mother unexpectedly, like I did, you just do that naturally. I’m glad to have all of her recipes and that she taught me how to cook. So she’s still here with me always.
